Dry January?

Are you still on track with your resolutions and intentions? Here’s a healthy-ish menu to share with those of you still partaking in a healthy January.

If you need this meal to be Vegan or Vegetarian, substitute White Bean Dip in place of the Shrimp Skewers.

If you don’t want to go full vegetarian, you can add chopped or shredded roasted chicken (a store bought rotisserie makes it a snap).

You can easily substitute the Pecorino for Vegan cheese.

This is already Gluten-Free and Vegan!
