Two different menus to start the year off with a touch of luck, tradition and comfort

So go ahead, throw a dinner party… we’ve got the menu.
Hoppin’ John with Buttermilk Cornbread

There is nothing more traditionally Southern or comforting to start off the year than Hoppin’ John, or Black eyed peas, with crispy buttermilk cornbread!
You can make this a couple of days in advance, refrigerate, then pop on the stovetop (whenever you get going after whatever the night before handed you…..) and let it simmer all day as guests come and go.
I like to serve this over cooked rice and sprinkle with sliced green onions to make it go a little further, especially if you don’t know exactly how many people are coming.
It also is easy and doesn’t hurt to double this recipe to feed more friends.
Make the Creole seasoning a few days before so you have it on hand when you put together the hoppin john.

Let’s face it.
No one wants to go through too much hassle the day after…. so, make this an interactive, create-your-own-cure kind of breakfast with lots of topping options.
I would also recommend cooking extra bacon (you can also do this a day or two in advance and slowly reheat morning of) when you make the bacon for the BMB, and suggest making some simple sheet pan eggs for those that need a heartier breakfast sandwich
